What is the difference between #807036 and a 638560 or 638540?

The 807036 fits the 4-134 F engine. The others fit the 4-134 L engine. One is composite and the other copper.

I have water IN my oil I assume the head gasket in bad. Should I purchase any other items if i'm changing the head gasket?

That is a good starting point. You may want to check your head studs while you have it off as well as your thermostat too.

(1) does it require any type of sealant or does it install dry? (2) does it matter which side goes up? Thanks.

You can use sealant if you prefer. It never hurts. Make sure all the holes line up to the block.
